Roasted Breakfast Potatoes

  • 3 medium to large size Russet potatoes
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoon olive oil

Instructions

  1. Preheat oven to 425° F degrees
  2. Wash and peel the potatoes. Chop peeled potatoes into approximately 1" x 1/2" cubes and place in a large bowl
  3. Combine smoked paprika, garlic powder, onion powder, salt, and black pepper
  4. Add olive oil to potatoes and mix, ensuring potatoes are fully coated in oil
  5. Add spices to potatoes and mix, ensuring potatoes are coated in spices
  6. Spread potatoes in single layer on baking sheet. You'll most likely need two baking sheets to accommodate all the potatoes 
  7. Bake potatoes for 20-25 minutes. Enjoy!

Notes

Potatoes store well for up to one week in the refrigerator. These are delicious as a side to eggs and bacon or as part of a breakfast burrito. I prefer to cook my potatoes for the full 25 minutes which yields a slightly crispy exterior on some of the potatoes.
