Flourless cookie - check. No refined sugar - check. Easy and delicious - check. Nothing beats a good, gooey cookie and bonus points for one that's on the healthier side with minimal ingredients. These gluten free almond butter cookies are slightly sweet with a rich flavor that almost hints of chocolate. Top them off with just a sprinkle of sea salt flakes, grab a glass of almond milk, and you are in cookie nirvana.
I have to be careful with my chocolate consumption due to flare ups with acid reflux, so having a go to chocolate free cookie recipe is essential in our household. This almond butter cookie recipe more than fits the bill and is a close second to our favorite traditional chocolate chip cookie recipe.
Tips for Making These Flourless Almond Butter Cookies
Let's start with picking out the almond butter you're going to use. I'd recommend using what's in your fridge as we all know almond butter is pricey!
My go-to almond butter is Trader Joe's Creamy Salted Almond Butter. It has two ingredients: almonds and sea salt. It does require stirring and it is produces a gooey cookie. If you have a no-stir almond butter (usually has palm oil and sugar in it) you can use that too, it will just produce a slightly firmer cookie.
These cookies are really interesting as they actually become gooier over time. They have an extremely soft center and continue to soften over a few days. I would advise eating within the first two days (not hard to do!) as they do become almost too gooey at that point (but still delicious). You can always freeze the cookies as well.
You can absolutely make the cookies smaller by using a smaller cookie scoop and cooking for 8 minutes. I behoove you to try the Maldon sea salt sprinkles. It just kicks the cookie up an entire notch.

Ingredients
- ½ cup almond butter
- ½ cup coconut palm sugar
- 1 egg
- ½ teaspoon baking soda
- ½ teaspoon vanilla extract
- sea salt flakes for sprinkling (I always use Maldon sea salt flaks)
Instructions
- Preheat oven to 350° F
- Combine all ingredients (excluding sea salt) in a small bowl and stir
- Use 1.5 tablespoon cookie scoop to scoop balls onto parchment lined cookie sheet
- Sprinkle each ball with sea salt flakes
- Bake for 8-10 minutes. Edges will be very lightly browned and centers will be gooey soft and oh so good
