    Mediterranean Avo Toast

    You don't have to be a millennial to enjoy a hearty slice of avocado toast. This hipster toast trend is here to stay and we've embraced it with open arms.

    This rendition of avocado toast features avocado and cottage cheese, fresh grape tomatoes, feta cheese, a drizzle of honey, and a hint of red pepper flakes. It's inspired by a similar toast we had while sipping lattes at the phenomenal, women-owned cafe, Invita, in Rancho Santa Fe. One bite and we knew we had to recreate a version of this deliciousness with a bit more protein and share it with the world.

    How To Make Avocado Tomato Toast With Feta

    Here are a few tips to ensure you get the most scrumptious version of this avocado toast tribute:

    • Start with a hearty, firm slice of whole grain toast - This toast consists of a lot of elements and you'll need a toast that won't get soggy or squish under the pressure. I made this whole wheat bread from scratch and it was perfect as a base. Other options include a toasted, thicker sourdough or toasted slice of Killer Dave's Whole Grain Bread.
    • High protein cottage cheese - I love Good Culture cottage cheese because it has probiotics, is creamy and has slightly higher protein than other standard brands.
    • Be choosy about your feta - Go for a legit feta made of sheep's milk that sits as a block in a tub of brine. Trader Joe's sells two great options: Authentic Greek Feta and Israeli Feta. These fetas are creamier and saltier then your typical cow's milk feta.
    • Use sweet grape tomatoes - Honestly, any tomato will be delicious, even a sliced Roma tomato. I would recommend a less juicy tomato to avoid too much moisture that can make the bread soggy.
    • Toast that bread - Ensure your bread base is nice and toasty. The crisper texture is the perfect balance against the creamy toppings.
    • Not a fan of sweet and spicy? - If you're not a fan of combining sweet with spicy, consider leaving off either the red pepper flakes or the honey drizzle. Love both? Consider using chili infused hot honey!
    • Want extra protein? Add a fried egg or scrambled egg whites. Place on top of the tomato and proceed to sprinkle with feta and red pepper. Skip the honey!

    The perfect blend of savory and slightly sweet, packed with healthy fats and fiber

    Ingredients

    Units Scale
    • ½ of a ripe avocado
    • ¼ cup low-fat cottage cheese
    • 1 slices of hearty whole grain bread (slightly thicker bread is divine for this)
    • 1 teaspoon crumbled feta cheese
    • ¼ teaspoon crushed red pepper flakes
    • 3 grape tomatoes
    • 1 teaspoon honey

    Instructions

    1. Toast the bread slice so that it is slightly crispy
    2. Scoop out contents of avocado into a small bowl and gently mash with back of a fork and mix with the cottage cheese
    3. Spread avocado cottage cheese mixture on the toasted bread
    4. Cut tomatoes into thirds and place on top of avocado
    5. Sprinkle 1 teaspoon of feta cheese and red pepper flakes onto toast
    6. Lightly drizzle the honey over the toast
