Think of Greek salsa as a miniature Greek salad. When we were in Santorini, we took a cooking class and made the most delicious, yet simple Greek salad out of fresh tomatoes, onion, cucumber, olive oil, vinegar and feta cheese.

This Greek salsa is modeled after that salad and is perfect for topping our Greek chicken pitas, shawarma bowls or a Mediterranean inspired chicken salad. It also makes a great snack for topping wedges of pita bread or dipping with pita chips. If adhering to a lower-carb diet, this salsa is a yummy topper for our Greek grilled chicken.

- 1 cup diced tomato
- 1 cup diced cucumber
- ½ cup diced red onion
- 2 tbsp chopped parsley
- 1 tbsp fresh lemon juice (about ½ a lemon squeezed)
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- ½ teas oregano
- ¼ teas sea salt
Instructions
- Combine all the tomato, cucumber, onion and parsley in a small bowl
- Combine the lemon juice, olive oil, vinegar, oregano and salt together and pour over the salsa vegetables. Stir and enjoy!
- Keep covered in refrigerator for up to 3 days
