    Spicy Mango Salsa - Perfect to Pair with Grilled Fish

    There's something about sweet and savory combined that creates a perfect balance of flavors, ticking all the boxes for the tastebuds. Fruit on a salad, a sweet BBQ sauce on pulled pork, fruit salsas on fish. It just works. With a few simple ingredients, that seemingly good fish taco has been elevated to mind-blowing status all because of what a great salsa can do. 

    Blackened Mahi Mahi with Mango Salsa

    This recipe incorporates fresh mangoes, fresh cilantro, fresh lime juice, jalapeño and tomato to create a perfect homemade salsa that's packed with vitamin C, vitamin A and potassium. This tropical vibe salsa pairs perfectly with our Grilled Blackened Mahi Mahi or with any other fish tacos recipe for that matter. 

    Picking a Ripe Mango

    Finding ripe mangoes comes down to feel rather than color. Mango color varies and whether the fruit is red or green does not necessarily indicate its degree of ripeness. Instead go off of feel. A ripe mango should have a little give (let's call it squish) similar to a ripe avocado or peach.

    Variations

    Here are some variations to consider if you'd like to switch up the recipe a bit: 

    • Sub tomatoes with diced red bell pepper. Both bell pepper and tomatoes have a slight sweetness and can be used interchangeably and still yield a delicious result
    • Add in pineapple. If you're feeling extra tropical, add in pineapple to the salsa. It compliments the existing flavors and adds a hint of acidity
    • Add creamy avocado. If you're looking to add in some healthy fats and cool down the spice, throw in some diced avocado

    So round up your fresh ingredients to add this to a nutritious dinner of fresh fish or fish tacos. It's a perfect easy dinner for warmer weather during the summer months or to pretend you're in that tropical locale. Sure to be a new favorite in your summertime recipe rotation.

    Ingredients

    Scale

    1 cup diced mango

    ¼ cup diced red onion

    1 finely diced jalapeno, include seeds if you don't mind some heat!

    2 tablespoons chopped cilantro

    ¼ cup diced tomato

    2 tablespoons lime juice (about juice of 1 lime)

    Pinch of salt to taste

    Instructions

    1. Combine mango, onion, tomato, jalapeno, and cilantro in a small bowl. Drizzle lime juice over ingredients and stir
    2. Add salt to taste
    3. That's really it! Enjoy!

    Notes

    This fresh mango salsa is sooo good with thick corn chips (think Trader Joe's corn dippers), tortilla chips, or as a topper for easy fish tacos, grilled fish, blackened Mahi Mahi or jerk chicken. Add in some red cabbage and lime wedges and you are set. Honestly, you'll be happy eating it straight out of the bowl.
