I'm embarrassed to say that broccoli was not something I started eating until my twenties. The hubby introduced me to it as we were trying to incorporate more vegetables (aka dietary fiber!) into our diet. Over the years, we've experimented with a myriad of ways of cooking broccoli from steaming to roasting.
We've landed on this recipe as the best way to enjoy broccoli because of its crispiness while still retaining just the right juiciness. Often times broccoli is soggy and limp and while still full of essential nutrients, there are so many better ways to enjoy this nutrient-dense vegetable.

Tips for Preparing Roasted Broccoli
This oven baked broccoli only requires one pan and just a smidgen of heart healthy olive oil and salt and pepper. The key to this recipe is preheating the sheet pan in the oven before adding the broccoli to it. You'll then bake broccoli at 425 F degrees for between 15-18 minutes. I like my broccoli a tad crispier than the hubby so if you're like me, bump up cooking time to 18 minutes.Â
Salt and pepper are simple seasonings yet delicious, but if you want to switch it up consider adding Parmesan cheese, crushed red pepper flakes, or even Trader Joe's Everything But The Bagel seasoning once the broccoli comes out of the oven.
Serving Suggestions
This simple roasted broccoli is a true crowd pleaser and makes the perfect keto-friendly side dish or side kick to grilled protein. I used to bring this broccoli to work everyday for lunch and paired with rotisserie chicken. Just beware that everyone at the office will hate you if you reheat broccoli in the communal microwave. It does not smell pleasant. You've been warned.

Simple yet delicious roasted broccoli. The perfect low-carb, nutrient dense side dish. The secret in this recipe to achieve crispy yet juicy broccoli, is to preheat the oven with the sheet pan in it. The uncooked broccoli hitting the hot pan creates a nice seared and crispy effect.
- Prep Time: 5 min
- Cook Time: 15-18 min
- Total Time: 21 minute
- Yield: 12 oz broccoli 1x
Ingredients
1 large head of broccoli or 12oz bag of broccoli florets
2 tablespoons extra virgin olive oil
½ teaspoon sea salt
½ teaspoon ground black pepper
Instructions
- Place baking sheet in oven. We want to heat up the baking sheet in the preheating oven. Preheat oven to 425° F
- Chop broccoli into small florets. Add chopped broccoli large bowl
- Add olive oil to broccoli and stir to coat
- Add salt and pepper to broccoli and stir to coat
- Once the oven is preheated remove the hot sheet pan and put broccoli onto the sheet in an single layer. It should sizzle.
- Bake broccoli for about 15-20 minutes until some pieces have touches of dark dark brown (almost black) crispy parts on the florets.
- Remove and let cool for a few minutes. Eat immediately to get the most crunch!
