
These spinach balls are super easy to make, are low in calories and full of flavor. They make a foolproof appetizer that is sure to be a crowd pleaser.
While the name spinach balls might cause an eyebrow raise, this vintage recipe makes a delicious appetizer that sneaks in lots of spinach, but is guaranteed to be a big hit even with non-vegetable lovers. These little bites are delicious as is but they are next level paired with a dipping sauce such as dijon mustard or even ranch dressing.
Ingredients Needed
Eggs: Eggs provide the glue that binds these balls together while adding heart healthy nutrients and protein.
Spinach: Just because it's frozen doesn't mean it's not full of nutrients. It's inexpensive too. Be sure to thaw the spinach and really squeeze out the excess water before adding to the mixture. You can put between paper towels and squeeze or place in a colander and apply pressure to remove the excess liquid. If the spinach is too full of moisture when cooked, the balls will not set properly and might result in a soggy mess.
Butter: Melt the butter before adding to the mixture so it evenly incorporates with the rest of the ingredients.
Herb Stuffing: Legend has it that Peppridge Farm Bread Stuffing is what is traditionally used for these. While I did in fact use Peppridge Farm Herb Stuffing for this recipe, any herb stuffing will do. Even Italian seasoned bread crumbs would work. You'll need to crush the herb stuffing from the larger cubes into fine crumbs. I put the stuffing in a plastic bag and whacked with a rolling pin. If the chunks of stuffing are too large, the balls don't hold together resulting in crumbly spinach balls.
Parmesan Cheese: Finely grated parmesan is perfect for this recipe.
Onion: White or yellow onion are ideal for this recipe but the key is to ensure the onion is very finely diced. I ran mine through a mini food chopper. Larger onion chunks are an overpowering taste in the balls and also cause the balls to not hold together as well.
Spices: Salt, thyme, garlic powder and black pepper

Serve up as a healthier appetizer at your next gathering. Freeze the prepared spinach balls in a freezer bag to have on hand to throw in the oven before an event. Add to your lunch or dinner as a side or quick snack. Don't forget the dipping sauces. These pair really well with dijon, brown or honey mustard. Pair with appetizer toothpicks for guests to easily grab and devour.

Ingredients
3 large eggs, beaten
10 oz package frozen spinach, thawed and drained thouroughly
5 tablespoons melted unsalted butter
1 teaspoon garlic powder
1 teaspoon black pepper
¼ teaspoon thyme
½ teaspoon salt
1 ½ cups seasoned cubed bread stuffing, like Pepperidge Farms, crushed
1 cup grated parmesan cheese
½ yellow onion, diced very finely
Instructions
1. Preheat oven to 350° F and line cookie sheet with parchment paper
2. In a large bowl mix together all ingredients
3. Form 1 inch small balls or use a cookie scoop and place on parchment lined cookie sheet
4. Cook balls for 25 minutes, until slightly golden brown. Enjoy!
