Spinach Balls

A tasty but low calorie crowd-pleasing appetizer.

Ingredients

3 large eggs, beaten

10 oz package frozen spinach, thawed and drained thouroughly

5 tablespoons melted unsalted butter

1 teaspoon garlic powder

1 teaspoon black pepper

1/4 teaspoon thyme

1/2 teaspoon salt

1 1/2 cups seasoned cubed bread stuffing, like Pepperidge Farms, crushed

1 cup grated parmesan cheese

1/2 yellow onion, diced very finely

Instructions

1. Preheat oven to 350° F and line cookie sheet with parchment paper

2. In a large bowl mix together all ingredients

3. Form 1 inch small balls or use a cookie scoop and place on parchment lined cookie sheet

4. Cook balls for 25 minutes, until slightly golden brown. Enjoy!
