A healthier twist on cookie dough as these bites are filled with a great balance of protein, fiber, and fat.

Ingredients

Scale

1/2 cup natural peanut butter (the drippy kind you have to stir)

1/3 cup maple syrup

2 scoops (56 grams) vanilla or cookie dough flavored protein powder

1/3 cup oat flour

2 tablespoons flaxseed meal

1/4 cup coconut flour

2 tablespoons chia seeds

3 tablespoons unsweetened almond milk, or milk of your choice

1/3 cup mini chocolate chips

1/4 teaspoon sea salt

Instructions

  1. Combine oat flour, coconut flour, protein powder, flax seed meal, chia seeds and salt in a large bowl
  2. Add peanut butter, maple syrup, almond milk and chocolate chips and stir until all incorporated
  3. Using a small cookie scoop or spoon, roll into small balls
  4. Store in refrigerator in airtight container for up to one week. Enjoy!
