Nutty Pecorino Zucchini Pasta

Toasted Pecan Pasta

Toasted pecans, fresh zucchini and basil and pecorino combine into a simple yet delicious pasta.

Ingredients

8 ounces Goodles Lucky Penne pasta

4 Tablespoons pecans, roughly chopped

5 Tablespoons toasted pecan oil, separated (Find Pecan Oil HERE)

2 cloves garlic, minced

1/2 teaspoon salt

1/4 crushed red pepper

1 1/2 cup zucchini cut into thin half moons

1/4 teaspoon black pepper

1 Tablespoon basil, cut into thin strips

1/4 cup pecorino cheese, grated

Instructions

  1. Cook pasta according to package directions in salted pasta water. Reserve at least 1/4 cup of pasta water. 
  2. In a small skillet, toast pecans over medium heat until fragrant and color deepens, about 2-3 minutes. Remove from skillet to avoid burning. 
  3. In a large skillet over medium heat, add 3 tablespoons of pecan oil. Add garlic and sauté for 1 minute. 
  4. Add salt and red pepper to garlic. 
  5. Add zucchini to skillet, sprinkle with black pepper and simmer until color brightens, about 30 seconds.
  6. Add pasta water to skillet and cooked pasta and stir to incorporate. Drizzle with remaining 2 tablespoons of pecan oil.
  7. Remove from heat and dress with toasted pecans, fresh basil and pecorino cheese.
