Quick Black Bean Red Mole Sauce

A wonderfully spiced mole filled with extra fiber and protein. Comes together in less than 20 minutes.

Ingredients

1 15 ounce can tomato sauce

1 15 ounce can black beans, drained

2 teaspoons garlic, minced

1/2 small yellow onion, diced

1 Tablespoon reduced sodium soy sauce

2-3 chipotle chilis in adobo sauce (adjust to how spicy you prefer)

2 teaspoons chili powder

2 teaspoons cumin

2 teaspoons coriander

1 teaspoon oregano

1/2 teaspoon cinnamon

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup chicken bone broth

Instructions

  1. Blend together all ingredients in a blender until smooth.
  2. Add blended ingredients to a large saucepan. Bring to a low boil and reduce to simmer for 10 minutes.

Notes

Makes 2 1/4 cups of sauce.
