PrintKale Apple Salad with Roasted Sweet Potatoes
All of the elements of this salad are so easy but so perfect. Each bite is filled with some sort of goody....a sweet potato, an apple chunk, a bite of cheese. Chop kale in smaller pieces for a less bitter flavor.

Ingredients
1 sweet potato, peeled and diced into 1" chunks
2 teaspoons olive oil
¼ teaspoon smoked paprika
½ teaspoon salt
4 cups of kale, roughly chopped
½ of a large apple, diced (I love Envy apples, but use your favorite)
1 Tablespoon pecans, roughly chopped
4 ounces skinless, boneless chicken breast, diced or shredded
.8 ounce cheddar cheese, diced (I use Trader Joe's unexpected cheddar)
Lemon Honey Dressing
2 teaspoons extra virgin olive oil
1 Tablespoon lemon juice
1 teaspoon honey
Pinch of kosher salt
Instructions
- Preheat oven to 400 degrees.
- In a bowl, toss sweet potatoes with 2 teaspoons of olive oil, paprika and salt. Bake for 20 to 25 minutes, until slightly browned and crisp on pan facing side.
- In a small dish, whisk together all dressing ingredients.
- In a bowl, massage dressing into kale.
- To serving bowls, add kale, apple, pecans, sweet potatoes, chicken and cheese.
