Going out to a restaurant for breakfast is one of life's little luxuries. Sitting in a little booth, sipping on a cup of coffee while perusing a menu of omelets, waffles, and hashbrowns. This nirvana only happens on vacation or a rare, lazy weekend morning.
Pop back to reality and typical weekday mornings are a whirlwind of rude alarm clocks, chugging coffee, working out, and rushing off to work. We both used to work ungodly hours starting at 5 am, but one of us would always take the time to pack a delicious to-go breakfast to make the work slog a little more bearable. Breakfast burritos, peanut butter toast, and yogurt parfaits were all in rotation, but eggs and potatoes were always number one favorite.
In our newlywed days, we'd fry up some generic brand frozen potatoes o'brien. As our cooking chops improved, we graduated to homemade potatoes o'brien. And now we've taken it to another level with these smoked paprika roasted breakfast potatoes. These are the absolute best breakfast potatoes in our book with homemade potatoes o'brien now bumped to second place.
These little taters have just a hint of spicy and a touch of crispness and are divine as a sidekick to eggs or as part of a breakfast burrito. This is our tried and true breakfast potato seasoning and our staple that we serve for holiday brunches.
So Let's Make Some Breakfast Potatoes
Measure out those yummy spices, take a second to admire the vibrant color then mix together and set aside. Trader Joe's carries all the spices you'll need, including the star of this show, smoked paprika.

Scrub those spuds. They are delicious but they are dirty. Put on some sing-a-long music and start peeling those taters.
Now it's time to chop. Cut the potatoes as you wish. Ultimately, you'll want your diced potatoes to be about 1 inch wide x ½ inch thick to ensure they cook through. Place them in a big bowl, you'll need room to stir them up with the oil and spices.

Pour the olive oil over the potatoes and stir. Add the spices to the potatoes and stir to coat. You'll need two baking sheets to cook all the potatoes in one go. I don't ever have the need to line or grease the baking sheets. I'm sure parchment paper would work just fine. Do try to spread the potatoes in a single layer on the sheets to ensure efficient cooking.
I like my potatoes a little crisper and always roast them for 25 minutes. Keep an eye on them to ensure thinner slices are not burning.

Ingredients
- 3 medium to large size Russet potatoes
- 2 teaspoons smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sea salt
- ¼ teaspoon ground black pepper
- 2 tablespoon olive oil
Instructions
- Preheat oven to 425° F degrees
- Wash and peel the potatoes. Chop peeled potatoes into approximately 1" x ½" cubes and place in a large bowl
- Combine smoked paprika, garlic powder, onion powder, salt, and black pepper
- Add olive oil to potatoes and mix, ensuring potatoes are fully coated in oil
- Add spices to potatoes and mix, ensuring potatoes are coated in spices
- Spread potatoes in single layer on baking sheet. You'll most likely need two baking sheets to accommodate all the potatoesÂ
- Bake potatoes for 20-25 minutes. Enjoy!
Notes
Potatoes store well for up to one week in the refrigerator. These are delicious as a side to eggs and bacon or as part of a breakfast burrito. I prefer to cook my potatoes for the full 25 minutes which yields a slightly crispy exterior on some of the potatoes.
